Description

A delightful rhubarb cake that brings together family and friends with its comforting flavors and memories.


Ingredients

Scale
  • 2 cups All-Purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1.25 cups brown sugar
  • 1/2 cup softened butter
  • 1 egg
  • 1 tsp vanilla
  • 1 cup milk
  • 2.5 cups chopped fresh rhubarb
  • 1/3 cup white sugar mixed with 1 tsp cinnamon (for topping)

Instructions

  1. Preheat the oven to 350º F. Grease a 9 x 13 baking dish.
  2. Sift together the flour, baking soda, and salt in a small bowl. Set aside.
  3. Cream together the brown sugar and softened butter until light and fluffy.
  4. Beat in the egg until well-combined and glossy.
  5. Stir in the vanilla.
  6. Alternately mix in the milk and flour mixture until smooth.
  7. Fold in the chopped rhubarb gently.
  8. Spoon the batter into the prepared baking dish and sprinkle cinnamon sugar on top.
  9. Bake for about 40 minutes, or until a knife inserted into the center comes out clean.
  10. Serve warm, optionally with ice cream or whipped cream.

Notes

Consider adding citrus zest for extra brightness or substituting half the butter with unsweetened applesauce for a lighter version.
