- 2 cups All-Purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1.25 cups brown sugar
- 1/2 cup softened butter
- 1 egg
- 1 tsp vanilla
- 1 cup milk
- 2.5 cups chopped fresh rhubarb
- 1/3 cup white sugar mixed with 1 tsp cinnamon (for topping)
Instructions
- Preheat the oven to 350º F. Grease a 9 x 13 baking dish.
- Sift together the flour, baking soda, and salt in a small bowl. Set aside.
- Cream together the brown sugar and softened butter until light and fluffy.
- Beat in the egg until well-combined and glossy.
- Stir in the vanilla.
- Alternately mix in the milk and flour mixture until smooth.
- Fold in the chopped rhubarb gently.
- Spoon the batter into the prepared baking dish and sprinkle cinnamon sugar on top.
- Bake for about 40 minutes, or until a knife inserted into the center comes out clean.
- Serve warm, optionally with ice cream or whipped cream.
Notes
Consider adding citrus zest for extra brightness or substituting half the butter with unsweetened applesauce for a lighter version.
