Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened butter, granulated sugar, and powdered sugar together until light and fluffy.
- Mix in the egg and vanilla extract until fully combined.
- Gradually add the all-purpose flour, baking powder, and salt, stirring until a soft dough forms.
- Roll the dough into 1-inch balls, then coat each ball with pastel sprinkles or colored sugar.
- Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8 to 10 minutes, or until the edges are lightly golden.
- Let the cookies cool on a wire rack.
Notes
Store cooled cookies in an airtight container at room temperature for up to a week. To freeze, layer between parchment paper in a freezer-safe container for up to three months.
