Ingredients
2 chicken breasts, seasoned with salt and pepper
2 cups heavy cream
1 cup Parmesan cheese, grated
1 cup sun-dried tomatoes, sliced
2 garlic cloves, minced
12 oz pasta (penne, rigatoni, or spaghetti)
2 tablespoons olive oil
1 cup fresh spinach (optional)
Salt and pepper, to taste
Instructions
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat.
3. Sear chicken breasts until golden brown and cooked through. Remove and set aside.
4. In the same skillet, sauté minced garlic until fragrant.
5. Deglaze the pan with a splash of chicken broth or white wine (optional).
6. Add heavy cream and sun-dried tomatoes to the pan. Simmer to thicken slightly.
7. Stir in grated Parmesan cheese until melted and smooth.
8. Return chicken to the pan, nestling it in the sauce.
9. Meanwhile, cook pasta until al dente. Drain.
10. Add cooked pasta to the skillet and toss to coat in sauce.
11. Optional: Stir in fresh spinach until wilted.
12. Serve hot with extra Parmesan and chopped fresh basil or parsley.
Notes
For a lighter version, use half-and-half instead of heavy cream.
You can substitute chicken breasts with chicken thighs, shrimp, or tofu.
Add a splash of chicken broth to thin the sauce if needed.
Store leftovers in an airtight container and reheat with a bit of cream or broth.
