A creamy, mildly spicy white chicken chili that is perfect for busy days. Just toss the ingredients in the slow cooker and let it simmer for a delicious and comforting meal.

- 1 lb boneless skinless chicken breasts or thighs
- 2 cans white beans (such as cannellini or great northern), drained and rinsed
- 1 can green chiles
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp oregano
- Salt and pepper to taste
- 4 oz cream cheese or sour cream
- Optional: 1 cup corn
Instructions
- Add diced onion, minced garlic, beans, green chiles, spices, and chicken to the slow cooker.
- Pour in chicken broth and give it a gentle stir.
- Cook on low for about 360 to 480 minutes or high for about 180 to 240 minutes, until the chicken is easy to shred.
- Remove the chicken, shred it with two forks, then put it back in.
- Stir in cream cheese or a scoop of sour cream. Let it melt and smooth out.
- Taste and adjust seasoning with salt and lime juice before serving.
Notes
For a thicker chili, mash some beans or blend half a cup with broth and stir it back in. Adjust spices according to taste.
