- 2 to 2.5 pounds boneless skinless chicken breasts or thighs
- 1 1/2 cups BBQ sauce
- 1/2 cup chicken broth or water
- 1 tablespoon brown sugar (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika (optional)
- Salt and pepper to taste
Instructions
- Lightly season the chicken with salt, pepper, garlic powder, and onion powder. Place it in the slow cooker in an even layer.
- In a bowl, stir together the BBQ sauce, broth, brown sugar (if using), and smoked paprika. Pour it over the chicken.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is easy to shred and reaches 165°F in the thickest part.
- Shred the chicken right in the slow cooker using two forks. Stir it well to coat with the sauce.
- Taste and adjust seasoning as desired. Add more BBQ sauce or brown sugar for sweetness, or a splash of vinegar for tanginess.
- Let it sit on warm for 10 to 15 minutes before serving to help the sauce cling to the chicken.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. To reheat, warm with a splash of water or BBQ sauce to prevent dryness.
