- 4 boneless, skinless chicken breasts (about 1.5 to 2 pounds)
- Salt and black pepper, to taste
- 2 tablespoons olive oil or butter
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream or half-and-half
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon Dijon mustard
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional)
- Fresh basil or parsley for garnish
- Cooked pasta, rice, or mashed potatoes, for serving
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Pat them dry with a paper towel.
- Heat the olive oil or butter in a skillet over medium-high heat.
- Brown the chicken briefly, 2 to 3 minutes per side.
- Transfer the chicken to the slow cooker and set aside.
- Sauté the garlic in the hot skillet for 30 to 60 seconds until fragrant.
- Add sun-dried tomatoes and stir for another minute.
- Pour in the chicken broth to deglaze the pan.
- Stir in the heavy cream, Parmesan, Dijon mustard, Italian seasoning, and red pepper flakes.
- Pour the sauce over the chicken in the slow cooker.
- Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours.
- If the sauce looks thin, whisk the cornstarch slurry and stir it into the sauce.
- Taste and adjust seasoning, then shred or slice the chicken as you prefer.
Notes
For a dairy-free option, substitute heavy cream with coconut milk and use dairy-free Parmesan. Leftovers can be stored in the refrigerator for up to 3 to 4 days.
