Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 to 2 pounds)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional)
  • Fresh basil or parsley for garnish
  • Cooked pasta, rice, or mashed potatoes, for serving

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Pat them dry with a paper towel.
  3. Heat the olive oil or butter in a skillet over medium-high heat.
  4. Brown the chicken briefly, 2 to 3 minutes per side.
  5. Transfer the chicken to the slow cooker and set aside.
  6. Sauté the garlic in the hot skillet for 30 to 60 seconds until fragrant.
  7. Add sun-dried tomatoes and stir for another minute.
  8. Pour in the chicken broth to deglaze the pan.
  9. Stir in the heavy cream, Parmesan, Dijon mustard, Italian seasoning, and red pepper flakes.
  10. Pour the sauce over the chicken in the slow cooker.
  11. Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours.
  12. If the sauce looks thin, whisk the cornstarch slurry and stir it into the sauce.
  13. Taste and adjust seasoning, then shred or slice the chicken as you prefer.

Notes

For a dairy-free option, substitute heavy cream with coconut milk and use dairy-free Parmesan. Leftovers can be stored in the refrigerator for up to 3 to 4 days.
