A comforting, hearty one-pot crockpot meal made with tender chicken, red potatoes, garlic, parmesan, and herbs — perfect for busy days and cozy evenings.
Ingredients
4 chicken breasts or thighs, boneless and skinless
1.5 pounds red potatoes, quartered
3 garlic cloves, minced
1 cup chicken broth
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1/2 cup grated parmesan cheese
Fresh parsley for garnish (optional)
Instructions
1. Trim excess fat from chicken. Rinse and quarter the red potatoes. Mince the garlic cloves.
2. Drizzle olive oil in the bottom of the crockpot. Add quartered potatoes, seasoning with salt and pepper.
3. Place chicken on top of the potatoes. Sprinkle with thyme.
4. Pour chicken broth evenly over the chicken and potatoes. Add minced garlic.
5. Sprinkle grated parmesan cheese over the top.
6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
7. Gently stir near the end of cooking to ensure even texture. Optional: add lemon juice for brightness.
8. Garnish with fresh parsley and serve hot.
Notes
Use chicken thighs for more moisture and flavor. Don’t overcrowd the crockpot — space helps cook evenly. Add veggies like carrots or green beans to make it more filling. Pre-browning chicken adds depth, but is optional. Leftovers reheat well and make great meal-prep portions.
