Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1 cup celery, chopped
  • 1/2 cup red onion, chopped
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup carrots, shredded
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Cook the elbow macaroni according to the package instructions. Allow it to boil until tender, then drain and rinse it under cold water.
  2. In a large bowl, combine the cooked macaroni with the chopped vegetables—celery, red onion, green bell pepper, and carrots.
  3. Mix together the mayonnaise with salt and pepper to create the dressing.
  4. Pour the dressing over the pasta and vegetables, stirring until everything is evenly coated.
  5. Chill in the refrigerator for at least one hour before serving.
