Description

A heartwarming dessert combining the tangy sweetness of rhubarb with a creamy filling, perfect for family gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 teaspoon ground cinnamon
  • 8 ounces cream cheese
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 cups rhubarb
  • 1/2 cup brown sugar
  • 1 cup rolled oats
  • 1/2 cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×13 inch baking pan with parchment paper.
  3. Combine the flour, granulated sugar, and butter in a mixing bowl until it resembles coarse crumbs.
  4. Stir in the oats and ground cinnamon.
  5. Reserve about a cup of the mixture for the topping.
  6. Press the remaining mixture into the bottom of your prepared pan.
  7. Beat the cream cheese, vanilla extract, and egg in another bowl until smooth.
  8. Fold in the chopped rhubarb until well coated.
  9. Pour the rhubarb cream cheese mixture onto your crust and spread evenly.
  10. Sprinkle the reserved flour mixture over the top.
  11. Bake for 30-35 minutes, or until golden.
  12. Let cool for at least an hour before cutting into bars.
