- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1 teaspoon ground cinnamon
- 8 ounces cream cheese
- 1 teaspoon vanilla extract
- 1 large egg
- 2 cups rhubarb
- 1/2 cup brown sugar
- 1 cup rolled oats
- 1/2 cup melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 9×13 inch baking pan with parchment paper.
- Combine the flour, granulated sugar, and butter in a mixing bowl until it resembles coarse crumbs.
- Stir in the oats and ground cinnamon.
- Reserve about a cup of the mixture for the topping.
- Press the remaining mixture into the bottom of your prepared pan.
- Beat the cream cheese, vanilla extract, and egg in another bowl until smooth.
- Fold in the chopped rhubarb until well coated.
- Pour the rhubarb cream cheese mixture onto your crust and spread evenly.
- Sprinkle the reserved flour mixture over the top.
- Bake for 30-35 minutes, or until golden.
- Let cool for at least an hour before cutting into bars.
