- 1 pound ground beef (80/20 preferred)
- 1 tablespoon olive oil (optional)
- 1 medium onion, chopped small
- 3 to 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can (28 ounces) crushed tomatoes
- 1 can (8 ounces) tomato sauce or splash of water
- 2 teaspoons Italian seasoning
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Pinch of sugar (optional)
- Red pepper flakes (optional)
- Parmesan rind (optional)
- Fresh basil or parsley (optional, for serving)
Instructions
- Start a big pot of salted water for pasta first.
- Brown the beef over medium-high heat, breaking it up until slightly golden.
- Add onion and cook for 3 to 4 minutes until softened.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in tomato paste and let it cook for 1 minute.
- Pour in crushed tomatoes and tomato sauce, then add Italian seasoning, oregano, salt, pepper, and a pinch of sugar.
- Simmer for 15 to 20 minutes, stirring occasionally.
- Taste and adjust seasoning as needed.
Notes
Let the beef brown well for flavor. Use pasta water to adjust sauce thickness.
