Description

A cozy and filling soup that captures the classic flavors of cabbage rolls without the hassle of rolling and baking.


Ingredients

  • 1 medium head of green cabbage, chopped
  • 1 pound ground beef
  • 1 cup white or brown rice
  • 1 can (15oz) diced tomatoes
  • 1 can (15oz) tomato sauce
  • 4 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon apple cider vinegar (optional)

Instructions

  1. Place the chopped cabbage, onion, and garlic in the crockpot.
  2. Add the ground beef on top of the vegetables.
  3. Pour in the diced tomatoes, tomato sauce, and beef broth.
  4. Stir in the rice, brown sugar, paprika, salt, and pepper.
  5. Cook on low for 6-8 hours or on high for 3-4 hours until the cabbage is tender and the flavors have melded.
  6. Serve hot, garnished with optional sour cream or fresh parsley.

Notes

This soup gets better with time; leftover flavors deepen and it thickens. Add more broth when reheating if necessary.
