Ingredients

- 1 medium head of green cabbage, chopped
- 1 pound ground beef
- 1 cup white or brown rice
- 1 can (15oz) diced tomatoes
- 1 can (15oz) tomato sauce
- 4 cups beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon brown sugar
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon apple cider vinegar (optional)
Instructions
- Place the chopped cabbage, onion, and garlic in the crockpot.
- Add the ground beef on top of the vegetables.
- Pour in the diced tomatoes, tomato sauce, and beef broth.
- Stir in the rice, brown sugar, paprika, salt, and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours until the cabbage is tender and the flavors have melded.
- Serve hot, garnished with optional sour cream or fresh parsley.
Notes
This soup gets better with time; leftover flavors deepen and it thickens. Add more broth when reheating if necessary.
