- 3 lbs Yukon Gold potatoes, cut into 1.5-inch chunks
- 1 lb smoked sausage or kielbasa, sliced into rounds
- 1 lb fresh green beans, trimmed and cut into 2-inch pieces
- 1 medium yellow onion, diced
- 1/2 cup unsalted butter, cut into pieces
- 1 1/2 tbsp olive oil
- 1 packet Lipton onion soup mix
- 1 1/2 tsp Cajun seasoning
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 1/2 tsp garlic powder
- 1/2 cup chicken broth
- Fresh parsley or green onions for garnish
- Hot sauce for serving
Instructions
- Wash and cut the Yukon Gold potatoes into 1.5-inch chunks, placing them in the bottom of your slow cooker.
- Dice the yellow onion and scatter it evenly over the potatoes.
- Drizzle olive oil over the potatoes and onions, then sprinkle with kosher salt, black pepper, and Cajun seasoning. Toss to coat evenly.
- Slice the smoked sausage and layer it over the seasoned potatoes.
- Layer the trimmed green beans on top of the sausage.
- Sprinkle the onion soup mix and garlic powder evenly over the top.
- Cut the butter into pieces and distribute them across the top, then pour in the chicken broth if using.
- Cover and cook on LOW for 360-420 minutes or HIGH for 240-300 minutes.
- Give everything a gentle stir before serving and garnish with fresh parsley or green onions.
Notes
You can use low-sodium broth for a lighter flavor or substitute your favorite sausage. Adjust cooking time for potato tenderness according to your slow cooker’s heat output.
