Description

A comforting Southern dish that combines Yukon Gold potatoes, smoked sausage, and green beans, all slow-cooked to perfection.


Ingredients

  • 3 lbs Yukon Gold potatoes, cut into 1.5-inch chunks
  • 1 lb smoked sausage or kielbasa, sliced into rounds
  • 1 lb fresh green beans, trimmed and cut into 2-inch pieces
  • 1 medium yellow onion, diced
  • 1/2 cup unsalted butter, cut into pieces
  • 1 1/2 tbsp olive oil
  • 1 packet Lipton onion soup mix
  • 1 1/2 tsp Cajun seasoning or Creole seasoning
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp garlic powder
  • 1/2 cup chicken broth
  • Fresh parsley or green onions, for garnish
  • Hot sauce, for serving

Instructions

  1. Wash and cut the Yukon Gold potatoes into 1.5-inch chunks, then place them in the bottom of your slow cooker.
  2. Dice the yellow onion into small pieces and scatter evenly over the potatoes.
  3. Drizzle the olive oil over the potatoes and onions, then sprinkle with kosher salt, black pepper, and Cajun seasoning. Toss to coat evenly.
  4. Slice the smoked sausage into rounds and layer them evenly over the seasoned potatoes.
  5. Layer the trimmed green beans on top of the sausage.
  6. Sprinkle the onion soup mix and garlic powder evenly over the top; do not stir.
  7. Cut the butter into pieces and distribute them across the top. Pour in chicken broth if desired.
  8. Cover and cook on LOW for 6–7 hours or HIGH for 4–5 hours until the potatoes are fork-tender.
  9. Give everything a final gentle stir to combine the sauce, taste, and adjust seasoning. Garnish with fresh parsley or green onions before serving.

Notes

Customize seasoning according to taste. For a lighter flavor, consider using low-sodium broth.
