A cozy and filling soup that combines the flavors of stuffed peppers without the hassle of baking.
Ingredients

- 1 lb ground beef
- 1 onion, diced
- 1–2 bell peppers, chopped
- 2 cloves garlic, minced
- 1 can crushed tomatoes
- 1 can tomato sauce
- 4 cups beef broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/2 tsp paprika (optional)
- 1 cup cooked rice (or cauliflower rice)
- A pinch of sugar (optional)
- A splash of Worcestershire sauce (optional)
Instructions
- Brown the ground beef in a skillet with diced onion, then drain any extra grease.
- Add the beef to your slow cooker.
- Stir in chopped bell peppers, garlic, crushed tomatoes, tomato sauce, broth, and seasonings.
- Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
- Add cooked rice near the end or cook rice separately and spoon it into bowls.
- Taste and adjust salt and pepper, then serve hot.
Notes
For a more classic stuffed pepper feel, cut peppers into larger chunks. Rice can be added separately for better texture in leftovers.
