Description

A cozy and filling soup that combines the flavors of stuffed peppers without the hassle of baking.


Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, diced
  • 12 bell peppers, chopped
  • 2 cloves garlic, minced
  • 1 can crushed tomatoes
  • 1 can tomato sauce
  • 4 cups beef broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 tsp paprika (optional)
  • 1 cup cooked rice (or cauliflower rice)
  • A pinch of sugar (optional)
  • A splash of Worcestershire sauce (optional)

Instructions

  1. Brown the ground beef in a skillet with diced onion, then drain any extra grease.
  2. Add the beef to your slow cooker.
  3. Stir in chopped bell peppers, garlic, crushed tomatoes, tomato sauce, broth, and seasonings.
  4. Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
  5. Add cooked rice near the end or cook rice separately and spoon it into bowls.
  6. Taste and adjust salt and pepper, then serve hot.

Notes

For a more classic stuffed pepper feel, cut peppers into larger chunks. Rice can be added separately for better texture in leftovers.
