Description

A comforting and creamy potato soup made effortlessly in a slow cooker, perfect for chilly nights.


Ingredients

Scale
  • 23 pounds Potatoes, peeled and diced
  • 1 medium Onion, diced
  • 23 cloves Garlic, minced
  • 4 cups Chicken or Vegetable Broth
  • 4 ounces Cream Cheese
  • 12 cups Milk or Half and Half
  • Cheddar Cheese, to taste for stirring and topping
  • Toppings (Bacon, Green Onions, etc.), as desired

Instructions

  1. Spray the slow cooker lightly for easier cleanup.
  2. Add diced potatoes, onion, garlic, broth, salt, pepper, and seasonings.
  3. Cook on low for 360 to 420 minutes or high for 180 to 240 minutes, until the potatoes are very soft.
  4. Mash some of the potatoes with a masher, or blend a couple of cups and stir it back in to control thickness.
  5. Stir in cream cheese until it melts, then add milk or half and half.
  6. Stir in a handful of cheddar, taste, and adjust salt and pepper.
  7. Serve hot with toppings.

Notes

Customize with toppings like bacon, sour cream, and green onions for extra flavor.
