Description

A cozy, cheesy, and filling lasagna-inspired soup made effortlessly in a slow cooker.


Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 small onion, chopped
  • 3 to 4 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce or crushed tomatoes with seasoning
  • 4 cups chicken or beef broth
  • 1 to 2 tablespoons tomato paste (optional)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 to 2 cups broken lasagna noodles (or any pasta you like)
  • 1 cup ricotta cheese
  • 1 to 2 cups shredded mozzarella
  • Parmesan for topping
  • Optional: spinach or basil for garnish

Instructions

  1. Brown your meat in a skillet first and then toss in the onion followed by garlic.
  2. Add the meat mixture to your slow cooker with marinara, broth, tomato paste, and Italian seasoning.
  3. Cook on LOW for 360 to 420 minutes or HIGH for 180 to 240 minutes.
  4. Stir in noodles during the last 30 to 60 minutes, checking for tenderness.
  5. Serve with ricotta and toppings like mozzarella and parmesan.
