Ingredients

  • 3 to 4 pounds of beef roast (chuck roast)
  • 1 packet of dry Italian seasoning mix
  • 1 cup of beef broth
  • 1 jar of pepperoncini peppers (with juice)
  • Optional: sliced provolone or mozzarella cheese for topping
  • Fresh hoagie or sub rolls for serving

Instructions

  1. Start by placing the beef roast in the crockpot. Don’t worry if it seems too big; it’ll shrink down during cooking.
  2. Next, sprinkle the Italian seasoning all over the roast generously.
  3. Pour in the beef broth. Toss in some pepperoncini peppers along with their juice for added spice.
  4. Cover the crockpot and set it to low. Let it cook for 8 hours.
  5. When done, carefully remove the roast and shred it with two forks.
  6. Return the shredded beef to the crockpot and mix it with the juices.
  7. Serve the Italian beef on fresh hoagie rolls, drizzling the juices over it, and top with provolone cheese if desired.
