Ingredients

- 2–3 boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
- 1 small yellow onion, diced
- 3–4 garlic cloves, minced
- 1 (14.5 oz) can crushed tomatoes
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
Instructions
- Place raw chicken at the bottom of the crock pot.
- Add chopped onion, minced garlic, Italian seasoning, and crushed tomatoes on top of the chicken.
- Pour in the chicken broth and cover the pot.
- Cook on low for 6–7 hours or high for 3–4 hours until the chicken is tender.
- Shred the chicken and return to the pot.
- Stir in heavy cream and gradually add Parmesan cheese until melted.
- Cook uncovered on low for an additional 20–30 minutes before serving.
Notes
For added flavor, consider adding a pinch of red pepper flakes or a splash of Worcestershire sauce. Leftovers taste even better the next day!
