Description

A creamy, vibrant pasta salad that embodies Southern hospitality, perfect for summer gatherings.


Ingredients

  • 8 oz Garden Rotini Pasta
  • 1 medium Red Onion
  • 1 medium Cucumber
  • 1 pint Grape Tomatoes
  • 1 medium Yellow Bell Pepper
  • 1 cup Italian Vinaigrette Dressing
  • 1/2 cup Mayonnaise
  • 1 tsp Cajun Seasoning
  • 1/2 tsp Ground Black Pepper
  • 1 tbsp White Sugar

Instructions

  1. Bring a large pot of salted water to a boil. Add the garden rotini pasta, cooking until al dente, which should take about 8-10 minutes. Stir occasionally to prevent sticking.
  2. While the pasta cooks, finely dice the red onion, cucumber, yellow bell pepper, and grape tomatoes.
  3. Once cooked, drain and rinse the pasta under cold water.
  4. In a large mixing bowl, gently combine the cooled pasta with the diced vegetables.
  5. In a separate bowl, whisk together the Italian vinaigrette, mayonnaise, Cajun seasoning, black pepper, and white sugar until smooth.
  6. Pour the dressing over the pasta and vegetables, tossing gently to combine.
  7. Refrigerate the salad for at least 30 minutes before serving.
  8. Serve chilled, garnished with additional black pepper or fresh herbs if desired.
