- 8 oz Garden Rotini Pasta
- 1 medium Red Onion
- 1 medium Cucumber
- 1 pint Grape Tomatoes
- 1 medium Yellow Bell Pepper
- 1 cup Italian Vinaigrette Dressing
- 1/2 cup Mayonnaise
- 1 tsp Cajun Seasoning
- 1/2 tsp Ground Black Pepper
- 1 tbsp White Sugar
Instructions
- Bring a large pot of salted water to a boil. Add the garden rotini pasta, cooking until al dente, which should take about 8-10 minutes. Stir occasionally to prevent sticking.
- While the pasta cooks, finely dice the red onion, cucumber, yellow bell pepper, and grape tomatoes.
- Once cooked, drain and rinse the pasta under cold water.
- In a large mixing bowl, gently combine the cooled pasta with the diced vegetables.
- In a separate bowl, whisk together the Italian vinaigrette, mayonnaise, Cajun seasoning, black pepper, and white sugar until smooth.
- Pour the dressing over the pasta and vegetables, tossing gently to combine.
- Refrigerate the salad for at least 30 minutes before serving.
- Serve chilled, garnished with additional black pepper or fresh herbs if desired.
