Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the orzo pasta and cook for 2-3 minutes, tossing frequently.
  4. Pour in the vegetable broth and bring to boil. Reduce heat and simmer for about 8-10 minutes, or until orzo is tender.
  5. Add the chopped spinach and stir until wilted.
  6. Pour in the heavy cream and mix well.
  7. Stir in the grated Parmesan cheese, and season with salt and pepper to taste.
