Ingredients

- 2 to 2.5 pounds potatoes, peeled or unpeeled, diced small
- 1 small onion, chopped
- 2 to 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- Salt, to taste
- Pepper, to taste
- A little paprika
- Dried thyme (optional)
- Milk, half and half, or cream cheese for a creamy finish
- Optional toppings: Bacon, shredded cheddar, green onions
Instructions
- Toss the potatoes, onion, garlic, broth, and seasoning into the crockpot.
- Cook on low for 6 to 7 hours or high for 3 to 4 hours until the potatoes are very soft.
- Mash some of the potatoes right in the pot.
- Add your creamy ingredient at the end and stir until well combined.
Notes
Use Yukon Gold or Russets for best results. Mash some potatoes for a creamy yet chunky texture.
