Description

A cozy, flavorful potato soup that cooks itself in the crockpot, perfect for cold nights.


Ingredients

Scale
  • 2 to 2.5 pounds potatoes, peeled or unpeeled, diced small
  • 1 small onion, chopped
  • 2 to 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • Salt, to taste
  • Pepper, to taste
  • A little paprika
  • Dried thyme (optional)
  • Milk, half and half, or cream cheese for a creamy finish
  • Optional toppings: Bacon, shredded cheddar, green onions

Instructions

  1. Toss the potatoes, onion, garlic, broth, and seasoning into the crockpot.
  2. Cook on low for 6 to 7 hours or high for 3 to 4 hours until the potatoes are very soft.
  3. Mash some of the potatoes right in the pot.
  4. Add your creamy ingredient at the end and stir until well combined.

Notes

Use Yukon Gold or Russets for best results. Mash some potatoes for a creamy yet chunky texture.
