Description

Flaky, buttery bars filled with vibrant rhubarb and topped with a delightful oat crumble, perfect for family gatherings.


Ingredients

  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 2/3 cup butter (cold and cut into 1/2-inch cubes)
  • 1/2 teaspoon salt
  • 1 egg
  • 5 stalks rhubarb (sliced into 1/2-inch thick pieces)
  • 1/2 cup sugar (for filling)
  • 1 lemon (freshly zested and juiced)
  • 1 teaspoon vanilla extract
  • 2 1/2 tsp cornstarch
  • 1 cup old-fashioned oats
  • 1/2 cup sugar (for topping)
  • 1 tsp vanilla sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup butter (melted and cooled slightly)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine 1/2 cup sugar, flour, baking powder, salt, and cold butter in a large bowl. Blend until the mixture resembles coarse crumbs.
  3. Stir in the egg until the dough is combined.
  4. Mix the sliced rhubarb, 1/2 cup sugar, lemon zest, lemon juice, vanilla extract, and cornstarch until coated in another bowl.
  5. Spread half of the crust mixture into a greased 9×13-inch baking pan. Pour the rhubarb filling on top, then sprinkle the remaining crust mixture over it.
  6. Combine oats, 1/2 cup sugar, vanilla sugar, ground cinnamon, and melted butter in a small bowl. Sprinkle this over the top.
  7. Bake for about 45 minutes, until the top is golden brown and the filling is bubbly.
  8. Allow the bars to cool completely before slicing.

Notes

Store leftover bars in an airtight container at room temperature for up to three days or refrigerate for enhanced flavors.
