- 1/2 cup sugar
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 2/3 cup butter (cold and cut into 1/2-inch cubes)
- 1/2 teaspoon salt
- 1 egg
- 5 stalks rhubarb (sliced into 1/2-inch thick pieces)
- 1/2 cup sugar (for filling)
- 1 lemon (freshly zested and juiced)
- 1 teaspoon vanilla extract
- 2 1/2 tsp cornstarch
- 1 cup old-fashioned oats
- 1/2 cup sugar (for topping)
- 1 tsp vanilla sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup butter (melted and cooled slightly)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine 1/2 cup sugar, flour, baking powder, salt, and cold butter in a large bowl. Blend until the mixture resembles coarse crumbs.
- Stir in the egg until the dough is combined.
- Mix the sliced rhubarb, 1/2 cup sugar, lemon zest, lemon juice, vanilla extract, and cornstarch until coated in another bowl.
- Spread half of the crust mixture into a greased 9×13-inch baking pan. Pour the rhubarb filling on top, then sprinkle the remaining crust mixture over it.
- Combine oats, 1/2 cup sugar, vanilla sugar, ground cinnamon, and melted butter in a small bowl. Sprinkle this over the top.
- Bake for about 45 minutes, until the top is golden brown and the filling is bubbly.
- Allow the bars to cool completely before slicing.
Notes
Store leftover bars in an airtight container at room temperature for up to three days or refrigerate for enhanced flavors.
