A comforting and hearty dish of tender chicken stewed in a creamy broth with fluffy dumplings, perfect for busy weeknights.
Ingredients

- 4 cups chicken broth
 - 1 lb chicken thighs or breasts
 - 2 cups chopped carrots
 - 2 cups chopped celery
 - 1 cup chopped onion
 - 1 tsp salt
 - 1/2 tsp pepper
 - 1/2 tsp garlic powder (optional)
 - 2 cups biscuit mix or homemade dough
 
Instructions
- Layer the bottom of the slow cooker with chopped carrots, celery, and onion.
 - Place uncooked chicken thighs or breasts on top of the veggies.
 - Pour in enough chicken broth to almost cover everything.
 - Season with salt, pepper, and garlic powder if desired.
 - Cover and cook on low for 5-6 hours until chicken is tender.
 - Shred the chicken and return to the slow cooker.
 - Scoop spoonfuls of biscuit mix onto the bubbling stew.
 - Cover and cook for another hour until dumplings are fluffy.
 - Serve hot and enjoy your comforting meal!
 
Notes
You can use rotisserie chicken for a quicker option, and frozen vegetables also work well.
