Description

Delightful churro cupcakes that bring the joy of traditional churros to your dessert table in an easy and fluffy cupcake form.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ cups cake flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 ¾ cups sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 ¼ cups milk
  • 4 tablespoons butter, melted
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ cup (1 stick) butter, softened
  • 8 ounces cream cheese, softened
  • ½ teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 5 cups confectioners’ sugar
  • 1 tablespoon milk (if desired)

Instructions

  1. Preheat your oven to 350 degrees. Line standard muffin tins with paper liners.
  2. Whisk together the all-purpose flour, cake flour, baking powder, salt, and cinnamon in a mixing bowl.
  3. Cream the room temperature butter and sugar in a larger bowl until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract until well incorporated.
  5. Gradually add the flour mixture and the milk in batches. Mix just until everything is combined.
  6. Fill the liners about 3/4 full with batter and bake for 20 minutes or until a toothpick comes out clean.
  7. Cool the cupcakes for about 10 minutes in the pan before transferring them to a wire rack to cool completely.
  8. Brush the cooled cupcakes with melted butter and dip them in a cinnamon sugar mixture.
  9. Beat together the softened butter and cream cheese for the frosting until fluffy. Mix in vanilla and cinnamon, and gradually add confectioners’ sugar.
  10. Frost the cooled cupcakes with the cinnamon cream cheese frosting.

Notes

If you forget to buy unsalted butter, using salted butter works too! A splash of almond extract can further elevate the flavor. Store leftovers in an airtight container in the fridge or freeze them.
