- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups tortilla chips, crushed
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/4 cup green onions, chopped
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and salsa in a large mixing bowl. Stir until well mixed.
- Layer the mixture evenly in a baking dish and smooth the top.
- Top with crushed tortilla chips, shredded cheddar cheese, and dollops of sour cream, pressing gently.
- Bake for 25-30 minutes, until the cheese is bubbly and golden.
- Remove from the oven, garnish with green onions and cilantro, and let rest for a few minutes before serving warm.
Notes
Use low-sodium beans for a lighter flavor. Swap Greek yogurt for sour cream for extra protein. Adjust ingredients based on personal taste.
