Description

A comforting casserole with orzo, chicken, and melted cheese, perfect for family dinners and gatherings.


Ingredients

  • 2 cups orzo pasta
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare a greased baking dish so it is ready when your mixture is done.
  3. Heat olive oil in a large skillet over medium heat and sauté onion and garlic until the onion is translucent.
  4. Add diced chicken and cook until no longer pink, lightly browning the pieces.
  5. Stir in broccoli, cherry tomatoes, Italian seasoning, salt, and pepper; cook until vegetables are tender.
  6. Bring chicken broth to a boil in a pot and cook orzo until al dente; drain.
  7. Mix the orzo with the chicken and vegetable mixture, then transfer to a greased baking dish.
  8. Top with cheeses and bake for 20-25 minutes until cheese is bubbly and golden.
  9. Garnish with parsley and serve.
  10. Let the casserole rest for 5 minutes before serving.
