Description

A comforting and hearty casserole featuring browned beef, tomatoes, corn, and cheese, perfect for family meals.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 cup corn kernels (fresh or frozen)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook the ground beef over medium heat until browned.
  3. Add onions and garlic; sauté until softened.
  4. Stir in black beans, kidney beans, diced tomatoes, corn, chili powder, cumin, salt, and pepper.
  5. Transfer the mixture to a greased baking dish.
  6. Sprinkle cheddar cheese and crushed tortilla chips on top.
  7. Bake for 25-30 minutes or until cheese is bubbly and golden.
  8. Garnish with fresh cilantro before serving.

Notes

For a looser sauce, add a quarter cup of beef broth when stirring the filling together. You can adapt this recipe for a slow cooker if desired.
