- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes with green chilies
- 1 cup corn kernels (fresh or frozen)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups shredded cheddar cheese
- 1 cup crushed tortilla chips
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Cook the ground beef over medium heat until browned.
- Add onions and garlic; sauté until softened.
- Stir in black beans, kidney beans, diced tomatoes, corn, chili powder, cumin, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- Sprinkle cheddar cheese and crushed tortilla chips on top.
- Bake for 25-30 minutes or until cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
For a looser sauce, add a quarter cup of beef broth when stirring the filling together. You can adapt this recipe for a slow cooker if desired.
