Description

A vibrant and delicious rhubarb simple syrup that captures the essence of family gatherings and Italian-American traditions.

Ingredients

Scale
  • 6 cups fresh rhubarb (chopped)
  • 4 cups water
  • 4 cups sugar
  • 1 tablespoon lemon juice

Instructions

  1. Combine the chopped rhubarb and water in a large pot. Bring to a simmer over medium heat, stirring occasionally, and cook for about 20-30 minutes until the rhubarb has softened. Strain the mixture through a fine mesh sieve to collect the juice.
  2. Return the strained liquid to the pot and add the sugar and lemon juice. Stir over low heat until the sugar dissolves, then bring to a gentle boil. Simmer for about 10 minutes until it thickens slightly.
  3. Pour the syrup into sterilized canning jars while still hot, leaving space at the top. Seal with lids and process in a water bath for 10-15 minutes.
  4. Let jars cool completely, then store in a cool, dark place. Enjoy over desserts or in drinks.

Notes

Use fresh rhubarb for the best quality. Ensure jars are sterilized before use. Adjust sweetness according to preference.
