- 4 cups water
- 4 cups sugar
- 1 tablespoon lemon juice
Instructions
- Combine the chopped rhubarb and water in a large pot. Bring to a simmer over medium heat, stirring occasionally, and cook for about 20-30 minutes until the rhubarb has softened. Strain the mixture through a fine mesh sieve to collect the juice.
- Return the strained liquid to the pot and add the sugar and lemon juice. Stir over low heat until the sugar dissolves, then bring to a gentle boil. Simmer for about 10 minutes until it thickens slightly.
- Pour the syrup into sterilized canning jars while still hot, leaving space at the top. Seal with lids and process in a water bath for 10-15 minutes.
- Let jars cool completely, then store in a cool, dark place. Enjoy over desserts or in drinks.
