Description

Ingredients

  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup finely diced rhubarb

Instructions

  1. Preheat your oven to 375 degrees F.
  2. Beat together the brown sugar, softened butter, vanilla extract, and the egg until creamy and well combined.
  3. Add the flour, cinnamon, salt, baking soda, and baking powder, mixing well until a smooth dough forms.
  4. Fold in the finely diced rhubarb until evenly distributed.
  5. Using a 1-inch cookie dough scoop, form balls of dough and place them on a parchment-lined baking sheet.
  6. Bake the cookies for 12-14 minutes, or until lightly golden around the edges.
  7. Cool the cookies on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.

Notes
