Instructions
- Preheat your oven to 375 degrees F.
- Beat together the brown sugar, butter, vanilla extract, and egg until creamy.
- Add the flour, cinnamon, salt, baking soda, and baking powder. Mix well.
- Fold in the finely diced rhubarb.
- Form balls of dough using a scoop and place on a parchment-lined baking sheet.
- Bake for 12-14 minutes until golden around the edges.
- Allow to cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
