Ingredients

  • 2 cups mixed salad greens
  • 1 cup fresh blueberries
  • 1/2 cup shelled pistachios
  • 1/4 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse the mixed greens under cool water and dry them thoroughly.
  2. Gently toss in the fresh blueberries.
  3. Sprinkle the shelled pistachios over the salad.
  4. Crumble the feta cheese and scatter it on top.
  5. Thinly slice the red onion and add it to the mix.
  6. In a small bowl, whisk together olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper until blended.
