A creamy and comforting mac and cheese dish made with blended cottage cheese, perfect for busy weeknight dinners.

- 8 oz elbow macaroni
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook the macaroni according to package directions and then drain.
- In a blender, combine the cottage cheese, milk, garlic powder, salt, and pepper. Blend until smooth.
- Return the drained macaroni to the pot and stir in the blended cottage cheese sauce.
- Add the shredded cheddar cheese and stir until it’s melted.
- Heat over low heat until everything is creamy and fully combined.
- Serve immediately while it’s warm and gooey.
Notes
If it looks thin at first, don’t worry; it will thicken later on. Store leftovers in an airtight container in the fridge and reheat with a splash of milk.
