Description

A creamy and comforting mac and cheese dish made with blended cottage cheese, perfect for busy weeknight dinners.


Ingredients

  • 8 oz elbow macaroni
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package directions and then drain.
  2. In a blender, combine the cottage cheese, milk, garlic powder, salt, and pepper. Blend until smooth.
  3. Return the drained macaroni to the pot and stir in the blended cottage cheese sauce.
  4. Add the shredded cheddar cheese and stir until it’s melted.
  5. Heat over low heat until everything is creamy and fully combined.
  6. Serve immediately while it’s warm and gooey.

Notes

If it looks thin at first, don’t worry; it will thicken later on. Store leftovers in an airtight container in the fridge and reheat with a splash of milk.
