- 8 oz elbow macaroni
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook the macaroni according to package directions and drain well.
- In a blender, combine the cottage cheese, milk, garlic powder, and salt and pepper; blend until smooth.
- Return the drained macaroni to the pot.
- Stir in the creamy cottage cheese mixture until well combined.
- Add the shredded cheddar cheese and stir until melted into the sauce.
- Heat the pot over low heat to allow everything to combine and serve hot.
Notes
If the mac and cheese looks too thin at first, don’t worry; it will thicken beautifully as it melds together.
