Description

A comforting, creamy mac and cheese made with blended cottage cheese and sharp cheddar, perfect for family dinners.


Ingredients

  • 8 oz elbow macaroni
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package directions and drain well.
  2. In a blender, combine the cottage cheese, milk, garlic powder, and salt and pepper; blend until smooth.
  3. Return the drained macaroni to the pot.
  4. Stir in the creamy cottage cheese mixture until well combined.
  5. Add the shredded cheddar cheese and stir until melted into the sauce.
  6. Heat the pot over low heat to allow everything to combine and serve hot.

Notes

If the mac and cheese looks too thin at first, don’t worry; it will thicken beautifully as it melds together.
