- 2 ripe mangos, peeled and diced
- 1 onion or shallot, finely chopped (red onion recommended)
- 1 jalapeño pepper, finely chopped
- ½ bell pepper, chopped
- ¼ cup fresh cilantro, chopped
- 1 garlic clove, minced
- 2 tablespoons extra virgin olive oil or avocado oil
- 1 lime, juiced
- ½ teaspoon sea salt or pink salt
- ⅛ teaspoon freshly ground black pepper
Instructions
- Combine all the ingredients in a mixing bowl.
- Gently mix to combine, being careful not to mash the mango pieces.
- Serve right away, or refrigerate for up to 5 days to allow flavors to meld.
