- 1/2 cup packed light brown sugar
- 1/2 cup old-fashioned rolled oats
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×13 inch baking dish by greasing it lightly.
- Cream the butter and 1/2 cup sugar together until fluffy in a large mixing bowl.
- Mix in 2 cups of flour and salt to form a soft dough, then press it evenly into the baking dish.
- Bake the crust for 15 minutes until slightly golden.
- Combine chopped rhubarb, 1 cup of sugar, 1/4 cup of flour, and cinnamon in a bowl for the filling.
- Prepare the topping by mixing brown sugar, oats, 1/4 cup flour, and softened butter until crumbly.
- Spread the rhubarb filling over the crust, followed by the topping.
- Bake for an additional 30-35 minutes until the topping is golden and the filling is bubbly.
- Slice into bars and enjoy once cooled completely.
Notes
Store leftover bars in an airtight container at room temperature for up to five days, or freeze for longer storage. These bars taste even better the next day.
