Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the diced apples.
- Pour the batter into the prepared cake pan and smooth the top.
- In a separate bowl, mix together the brown sugar, rolled oats, and melted butter to create the streusel topping.
- Sprinkle the streusel evenly over the batter.
- Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before serving.
