- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips
- 1/2 cup white chocolate chips
- 1/2 cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3 to 5 minutes.
- Crack the eggs into the bowl and add the vanilla extract, mixing until fully incorporated.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture and stir gently until just combined.
- Fold in the semi-sweet chocolate chips, white chocolate chips, and crushed peppermint candies.
- Drop heaping tablespoons of dough onto a parchment-lined baking sheet, spaced two inches apart.
- Bake for 10–12 minutes, until the edges are golden and the centers are set but still soft.
- Allow to cool on the baking sheet before transferring to a wire rack.
Notes
These cookies are best served warm and can be stored in an airtight container at room temperature for about a week. For longer storage, freeze the dough.
