Description

A cozy and comforting dish that simmers in the slow cooker, filled with chicken, white beans, and spices.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, combine the chicken, white beans, green chilies, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper. Bring to a boil.
  2. Reduce heat and simmer for 25 to 30 minutes, or until the chicken is cooked through.
  3. Remove the chicken from the pot, shred it, and return it to the pot.
  4. Stir in the sour cream and cheese (if using) until well combined.
  5. Serve hot, garnished with fresh cilantro.

Notes

This dish gets better overnight and can be reheated easily. For a twist, consider adding seasonal veggies or using Greek yogurt instead of sour cream.
