- 1 pound boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (optional)
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, combine the chicken, white beans, green chilies, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 25 to 30 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot, shred it, and return it to the pot.
- Stir in the sour cream and cheese (if using) until well combined.
- Serve hot, garnished with fresh cilantro.
Notes
This dish gets better overnight and can be reheated easily. For a twist, consider adding seasonal veggies or using Greek yogurt instead of sour cream.
