A hearty and flavorful vegan lentil soup that’s easy to make in your crock pot, perfect for lazy evenings.
Ingredients

- 1 cup dried lentils
 - 2 medium carrots, chopped
 - 2 stalks celery, chopped
 - 1 onion, chopped
 - 3 cloves garlic, minced
 - 1 can diced tomatoes
 - 6 cups vegetable broth
 - 2 teaspoons salt
 - 1 teaspoon black pepper
 - 1 teaspoon smoked paprika (optional)
 - Juice of 1 lemon
 - Fresh parsley for garnish
 
Instructions
- Chop the carrots, celery, onions, and garlic.
 - In a crock pot, combine chopped vegetables, dried lentils, diced tomatoes, and spices.
 - Pour in the vegetable broth and stir well.
 - Cook on low for 6-7 hours or high for 4 hours.
 - At the end of cooking, add lemon juice and adjust seasonings to taste.
 - Serve with fresh parsley and enjoy!
 
Notes
If the soup is too thick, add a splash of broth. Leftovers taste even better the next day. Freeze in single servings for easy lunches.
