- 2 pounds starchy potatoes (Russet or Yukon Gold)
 - 1 medium onion, diced
 - 2 cloves garlic, smashed
 - 4 cups chicken or vegetable broth
 - 1 cup half-and-half or whole milk
 - 2 tablespoons butter
 - Salt to taste
 - Black pepper to taste
 - Shredded sharp cheddar cheese (optional)
 - Toppings: bacon crumbles, green onions, sour cream, chives, jalapenos, roasted vegetables (optional)
 
Instructions
- Peel and dice the potatoes, then add them to the slow cooker.
 - Add in the diced onion, smashed garlic, salt, and broth just to cover.
 - Cook on low for 4 to 6 hours until the potatoes are fork-tender.
 - Mash the potatoes or blend them for a creamy texture, then stir in half-and-half or milk and butter.
 - Let it cook for an additional 15 minutes, season to taste, and serve.
