Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 1 cup chicken broth
  • 1/4 cup capers, rinsed
  • Fresh parsley, chopped for garnish

Instructions

  1. Season chicken breasts with salt and pepper, then dredge in flour, shaking off excess.
  2. Pat each breast dry to help the flour stick evenly.
  3. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat.
  4. Add the chicken and cook until golden brown and cooked through, about 4-5 minutes per side. Remove and set aside.
  5. In the same skillet, add lemon juice, chicken broth, and capers; bring to a boil and scrape up browned bits.
  6. Reduce heat and add remaining butter, stirring until melted.
  7. Return chicken to the skillet and cook for an additional 2-3 minutes, spooning sauce over each breast.
  8. Garnish with fresh parsley and serve immediately.
