Ingredients

- 1 1/2 cups butter, softened to room temperature
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 3/4 cups all-purpose flour
- 1/4 tsp salt
- 11 oz caramel bits
- 1 TBSP heavy cream
- 2 cups milk chocolate chips
- 2 tsp coconut oil or vegetable shortening
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a stand mixer, combine the softened butter and powdered sugar, mixing on low speed until well combined.
- Add the vanilla extract and mix until well blended.
- Gradually add in the flour and salt, mixing until a soft dough forms.
- Roll out the dough between two sheets of parchment paper to about 1/4 inch thick.
- Cut out rounds of dough with a cookie cutter and arrange them on the baking sheet with 1 inch spacing.
- Bake for 10-12 minutes until edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a rack.
- In a microwave-safe bowl, combine caramel bits and heavy cream. Microwave for 60 seconds and stir until smooth.
- Spoon melted caramel over cooled cookies, then let it set.
- In another bowl, melt chocolate chips with coconut oil in the microwave. Spoon over hardened caramel and let set completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. For long-term storage, freeze them in an airtight container.
