Description

A comforting Tuscan soup filled with tender potatoes, savory sausage, and vibrant kale, perfect for slow cooking.


Ingredients

Scale
  • 1 lb Italian sausage
  • 4 slices bacon
  • 1 bunch kale, chopped
  • 4 large potatoes, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving drippings in the pot.
  2. Add the sausage to the pot and cook until browned.
  3. Stir in the diced onion and minced garlic; sauté until soft.
  4. Add the diced potatoes and pour in the chicken broth. Bring to a gentle boil.
  5. Reduce heat and simmer for 15 to 20 minutes until the potatoes are tender.
  6. Stir in the chopped kale and return the cooked bacon.
  7. Pour in the heavy cream and simmer for another 5 minutes.
  8. Season with salt and pepper to taste before serving hot.

Notes

Garnish with freshly grated Parmesan cheese and serve with crusty bread or a simple salad for a complete meal.
