Ingredients

  • 2 pounds chicken thighs (boneless, skinless)
  • 1/2 cup soy sauce
  • 1/2 cup honey (or maple syrup)
  • 1/4 cup rice vinegar
  • 1 garlic clove, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons cornstarch + 2 tablespoons water (for thickening)
  • Optional: sesame seeds, sliced green onion for garnish

Instructions

  1. Place the chicken thighs in the crock pot.
  2. Mix together soy sauce, honey, rice vinegar, minced garlic, and ginger, then pour over the chicken.
  3. Cook on low for 3 to 4 hours or until chicken is cooked through.
  4. For thickening, ladle out some sauce, whisk in cornstarch slurry, and pour back in the pot to thicken the sauce.
  5. Serve and garnish with sesame seeds and green onions if desired.

Notes
