- 1 1/2 cups sugar cookie dough
- 2 (8 oz) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1/2 cup heavy cream
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C) and press the sugar cookie dough into the bottom of a 9-inch springform pan. Bake for 10-12 minutes until golden, then let cool completely.
- In a bowl, beat the cream cheese until smooth and creamy.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Fold in the sour cream and lemon juice gently to keep the mixture light.
- Pour the cheesecake mixture over the cooled crust and smooth the top.
- Bake for 45-50 minutes until the center is set with a slight jiggle.
- Cool at room temperature then refrigerate for at least 4 hours before serving.
- Optional: Whip the heavy cream and spread over the top before serving.
Notes
For an extra touch, add crushed pecans on top of the whipped cream or layer fruit preserves beneath the cheesecake for a refreshing twist.
