Description

A delightful blend of sugar cookie and cheesecake for a comforting dessert experience.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, mix together flour, baking soda, and salt.
  3. Cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract into the creamed mixture.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Press the dough into the bottom of the prepared springform pan.
  7. Bake for 10-12 minutes and let cool completely.
  8. Beat the cream cheese and powdered sugar until smooth.
  9. Add vanilla extract and mix well.
  10. Whip the heavy cream until stiff peaks form and fold into the cream cheese mixture.
  11. Pour the cheesecake mixture over the cooled crust and smooth the top.
  12. Chill in the refrigerator for at least 4 hours or until set.
  13. Serve and enjoy!

Notes

For added flavor, consider using almond extract or lemon zest. Store leftovers tightly covered in the refrigerator for up to 3-4 days.
