Instructions
- In a large pot, brown the ground beef or turkey over medium heat. Drain any excess fat.
- Add the chopped onion and minced garlic to the pot and sauté until softened.
- Stir in the diced tomatoes, chopped bell peppers, beef broth, and uncooked rice.
- Add the Italian seasoning, salt, and pepper.
- Bring the soup to a boil, then reduce heat and let it simmer for about 20-30 minutes, or until the rice is cooked.
- Serve hot, topped with shredded cheese and sour cream if desired.

For a lighter flavor, use low-sodium broth or turkey. Adjust spices as needed for personal taste.
