Description

Delicious and tender strawberry shortcake bars that are a family favorite, perfect for gatherings and sharing.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. In a bowl, mix flour, powdered sugar, salt, and softened butter until crumbly. Press into the bottom of the prepared pan to form a crust.
  3. Bake the crust for 15 minutes until lightly golden.
  4. In another bowl, combine strawberries, granulated sugar, and cornstarch. Toss gently to coat.
  5. Spread the strawberry mixture evenly over the baked crust.
  6. Return to the oven and bake for another 25-30 minutes or until the strawberries are bubbly.
  7. Allow to cool before slicing into bars.

Notes

These bars are best served with a sprinkle of powdered sugar or alongside a scoop of vanilla gelato.
