Instructions
- Puree the strawberries with sugar and lemon juice until smooth.
- Press the lid down and let the berries break into a glossy, pink puree.
- Taste lightly for balance; it should be bright and sweet.
- Sprinkle gelatin over cold water in a small bowl and let it sit for a few minutes until it blooms.
- Heat the gelatin mixture over low heat until dissolved, then mix it into the strawberry puree.
- Whip the heavy cream with vanilla extract in a mixing bowl until soft peaks form.
- Fold the strawberry mixture into the whipped cream until combined.
- Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.
