Ingredients

  • 46 bone-in chicken thighs
  • 1 green pepper, sliced
  • 1 onion, sliced thin
  • 1 red pepper, sliced thin
  • 1/2 cup chicken broth
  • 1/8 cup milk (whole)
  • 4 tbsp unsalted butter
  • 6 tbsp flour (1 tbsp to coat chicken, 3 tbsp for veggies, 2 tbsp for gravy)
  • 1 tsp chicken bouillon
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp cajun spice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried herbs
  • 2 tsp paprika

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Season chicken thighs generously with spices and 1 tbsp flour.
  3. In a hot skillet, melt butter until sizzling.
  4. Sear the seasoned chicken until golden brown on both sides, then set aside.
  5. In the same pan, sauté onions and bell peppers until tender.
  6. Add 1 tbsp butter and 3 tbsp flour to create a roux, stirring until smooth.
  7. Return chicken to the pan, then add broth and milk; mix well.
  8. Bake covered for 20 minutes, then remove some liquid to make a slurry.
  9. Pour thick gravy back into the dish and mix gently.
  10. Continue to bake uncovered for 20 minutes at 375°F (190°C).

Notes

For slow cooker method, brown the chicken and sauté veggies, then combine all ingredients in a slow cooker and cook on low for 5 to 6 hours, adding a flour slurry near the end if needed.
